Mangoes and chiles are the perfect combination of sweet and spicy, something that I crave in the summer heat. I like making these pops in shot glasses instead of in regular popsicle molds which tend to be pretty large.
Ingredients
-
2/3 cup sugar
-
2/3 cup water
-
1 tsp Piment d'Ville
-
4 cups cubed mango
Directions
For the Simple Syrup
Combine sugar, water, and Piment d'Ville in a small sauce pan and bring to a simmer.
Once sugar has dissolved, turn off the heat and allow to cool to room temperature.
For the Ice Pops
Purée mango in a blender with half of the simple syrup. You want the blend to be sweet enough and spicy. Add more of the simple syrup if you want it to be sweeter.
Pour mixture into ice pop molds or shot glasses and freeze for about an hour. Add popsicle sticks to the middle of each mold and return to the freezer until fully frozen.
To remove ice pops, run mold or shot glass under warm water in order for pop to release.
