One thing I feel strongly about is the importance of surrounding
yourself with people who similarly like to cook and eat. That way you
can ensure the food you cook is appreciated and that there's always
somewhere to go for a good meal. My friend Lindsay is one of those
people. She's also the kind of person who has a bumper sticker on her
car that says "If you love people, give them cheese." I'm here for that.
Here's her recipe for Cheesy Grits.
Ingredients

1 Cup water

1/4 Cup grits

1/2 tsp Piment d'Ville (regular, smoky or spicy)

1/2 Cup grated cheese (preference for a good orange cheddar)

1 egg beaten (optional, but always recommended)

1 Tbsp butter

salt
Directions
In a small pot, boil 1 cup of water.
Add 1/4 cup of grits and 1/2 tsp PDV and reduce the heat to low. Cover the pot. Simmer for about 10 minutes, stirring occasionally.
Remove the pot from heat and stir in grated cheese, a beaten egg, a tablespoon of butter, and salt to taste. Add a sprinkle of Piment on top before eating.
